Chocolate Lava Cake

Total Time: 45 mins Yield: 16 brownies

Ingredients

  • 1 stick unsalted butter
  • 6 oz of bitter sweet chocolate
  • 2 whole eggs 
  • 2 egg yolks
  • 1/4 cup sugar
  • pinch salt
  • 2 tbsp flour plus more for dusting ramekins

Directions

  1. Preheat oven to 450 degrees.
  2. Butter and flour 6oz ramekins(4) set on baking sheet, in a double boiler over simmering water melt butter with chocolate, beat eggs with egg yolks in a separate bowl until thickened and pale yellow whisk chocolate until smooth and then quickly whisk\ egg mix into chocolate.
  3. Pour into prepared ramekins and bake for 12 min until sides of cake are firm and the center is soft.,  Let cakes cool for 1 min place inverted baking pan over cakes and flip over so all cakes come out clear. 
  4. Top with powdered sugar and fresh berries garnish with more chocolate sauce and serve with ice cream of your choice my favorite is pistachio for this dish,
